NSW Food Safety Regulations require certain hospitality and retail food service businesses in NSW to have a designated Food Safety Supervisor (FSS) responsible for implementing safe food handling on the premises. The Food Safety Supervisor requirement applies to businesses serving food that is ready-to-eat, potentially hazardous, and not sold and served in its package including: restaurants, cafes, takeaway shops, retail food outlets, caterers, bakeries, clubs, hotels, temporary premises (e.g. food market stalls), mobile food vendors and supermarket hot food sales.   

Our course is nationally accredited and covers all of the key skills required to be a Food Safety Supervisor in today's food-handling environment.

 The FSS Course will include:

  • Food Safety Programs / Procedures for identifying and minimizing food hygiene risks

COURSE UNITS

The Food Safety Supervisor course is divided into two (2) separate courses: Retail and Hospitality. The units below are covered in each of the courses.

Retail                                                   

  • SIRRFSA001 – Handle food safely in a retail environment

Hospitality

  • SITXFSA005 - Use hygienic practices for food safety

  • SITXFSA006 - Participate in safe food handling practices

Requirements

If you are studying on a Student Visa you are not eligible to take this course.

Food Safety Supervisor Recertification Training

Food Safety Supervisor (FSS) certificates will expire from 1 September 2015. Under the NSW Food Act 2003, FSS certificates are current for five years from date of issue. To assist an FSS with re-certification, Registered Training Organisations (RTOs) approved by the NSW Food Authority (the Food Authority) are offering training on food safety issues currently affecting the NSW hospitality and retail food service sector.

Based on an analysis of compliance statistics and microbiological surveys on food safety in the retail food service sector, the Food Authority found that poor performance in three key areas – allergen management, handling eggs safely, and cleaning and sanitising – often contributed to foodborne illness outbreaks. As a result, recertification training has been designed to enhance knowledge in these key areas.

Food businesses have 30 working days, from the date of expiry of the FSS certificate to make sure their appointed FSS participates in recertification training and obtains a new FSS certificate. By doing so, they will continue to promote and support a highly skilled and compliant retail food sector in NSW.
